ingredients
1/4 teaspoon oregano leaves
1/4 teaspoon dried marjoram leaves
1/4 teaspoon garlic powder
1/4 teaspoon ground red pepper
1 1/4 teaspoon Cajun seasoning
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1 tablespoon vegetable oil
2 boneless, skinless chicken breasts (6 ounces each), cut into 1/4-inch strips
1 medium green bell pepper, cut into thin strips
1 medium onion, sliced 1/4-inch
1 medium tomato, cut into 12 wedges, halved crosswise
8 flour tortillas (8-inch size), warmed
directions
In a small bowl stir together the first 5 ingredients. Pat onto chicken strips and let stand at room temperature for 10 to 12 minutes.
In a large skillet heat oil and add chicken. Cook over medium heat, until chicken is no longer pink about 5 to 8 minutes.
Add green pepper and onion and cook until vegetables are crisply tender. Add tomatoes and cook for another 1 minute or so. Spread chicken mixture onto warmed tortillas.
