Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.

The crock pot is a great way to make fajitas! No grill, no mess!

2 pounds boneless, skinless chicken, cut into strips
1 onion, thinly sliced
1 red or green bell pepper, seeded and sliced
2 teaspoons chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/2 cup chicken broth
1 tablespoon fresh lime juice
8 warm flour tortillas
shredded Cheddar cheese
sour cream
guacamole
shredded lettuce
diced tomato
Combine the chicken, onion, and bell pepper in the crock pot. In a bowl, mix together the chili powder, cumin, salt, broth, and lime juice. Pour over the chicken mixture.
Cover the crock pot and cook on low heat for 6 hours or until the chicken is cooked through and the vegetables are tender.
To serve, place some of the chicken and vegetable mixture in the center of each tortilla. Top with shredded cheese, sour cream guacamole, lettuce, and tomato. Serve immediately.

I love this recipe. Tastes like real fajitas but with less work. I add extra peppers and onions.

The chicken is tender and good but doesn't have that seared texture that you get with real fajitas. Easy to make so I'll probably make it again.
