Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.

A delicious one-dish meal. Chicken, mushrooms, tomatoes, and garlic are cooked in a skillet with your choice of pasta.

1 pound boneless, skinless chicken, cut into bite-sized pieces
2 teaspoons olive oil
8 ounces fresh button mushrooms, sliced
1 teaspoon minced garlic
1 teaspoon dried Italian seasoning
1/2 cup dry white wine
1 can (15 ounce size) diced tomatoes, undrained
1 can (15 ounce size) chicken broth
1/2 cup water
8 ounces egg noodles, macaroni, or orzo
salt and pepper, as desired
fresh herbs, if desired
Heat oil in a skillet over medium heat. Add the mushrooms to the skillet and stir until mushrooms start to give off some of their liquid. Add the garlic and cook until it starts to soften.
Add the chicken to the skillet along with the seasoning. Cook for three minutes.
Add the wine and cook stirring constantly for one minute. Add the tomatoes, broth, water, and pasta. Bring to a boil and press pasta down into the liquid so it is covered.
Cover and cook at moderate boil for five minutes stirring once. Remove cover and continue to cook until pasta is done (2-4 more minutes) and most of the excess liquid is cooked off.
Sprinkle with salt, pepper, and fresh herbs before serving.

I just made this again using medium egg noodles. I sauteed the mushrooms along with some added chopped onions this time. I also added a few more mushrooms and got creative with sliced black olives. This recipe gives you a lot of latitude for adding your own creative touches! Next time, I'm going to add a hint of anise seed. I love this combination of ingredients! Remember to add extra diced tomatoes and extra chicken (for a meatier dish if you care to). Topping the table presentation off with a bit of fresh grated parmesan cheese hits it out of the park. This recipe is a keeper!

Great recipe! Easy to make and is delicious. I added a little extra Italian seasoning, garlic and an extra can of diced tomatoes. The dry white wine really makes this recipe shine.
