Make your mornings a little less hectic with these overnight breakfast recipes. Prep the night before and enjoy a warm, comforting meal in the morning.




1 pound sausage meat
1 onion, chopped
1/4 teaspoon black pepper
1 clove garlic, chopped
3 cups macaroni pasta, cooked
1 cup mushrooms, drained
1 cup cottage cheese
1/4 teaspoon oregano
1/4 cup spaghetti sauce
1/4 teaspoon basil
1/4 teaspoon garlic powder
1/4 teaspoon dry mustard
breadcrumbs, (optional)
grated cheese
Preheat oven to 350 degrees F.
Saute sausage meat until light brown. Drain fat, separate meat with fork, set aside. Saute onion, garlic and mushrooms. Add sausage meat, spices. Stir in sauce. Add macaroni and stir.
Arrange alternate layers of macaroni-meat mixture and cottage cheese; ending with meat. Top with bread crumbs and cheese if desired.
Bake at 350 degrees F for 25-30 minutes.

We thought the quantity of spaghetti sauce was off in this recipe. 1/4 cup just didn't seem enough. We used a whole small jar instead to help bind the ingredients together. Also, the directions imply that there should be multiple layers, however with only 1 cup of cottage cheese that'd be rather difficult. We divided the pasta mixture in half - placed half in the bottom of the baking dish then topped with the cottage cheese. Then topped with the remaining pasta and baked as directed. We didn't add the breadcrumbs but we did top with fresh grated parmesan cheese.
