Baked Penne With Sausage

Pasta bakes are one of the easiest, tastiest way to get a delicious dish on the table for a big family meal. A side salad like a Caesar would be make a perfect pairing for a portion of all the cheesy Italian goodness.

8 ounces penne pasta
1 pound Italian turkey sausage (uncooked)
1 cup chopped onion
3 cloves garlic, minced
1 can (14.5 ounce size) crushed tomatoes
1 can (14.5 ounce size) diced tomatoes
1 1/2 cup shredded light mozzarella cheese
1 cup grated Parmesan cheese

directions

Preheat the oven to 375 degrees F. Coat a baking dish with cooking spray.

Cook pasta in plenty of lightly salted boiling water.

Meanwhile, squeeze the sausage out of the casings into a large nonstick skillet. Toss with the onion and garlic and turn the heat to medium. Cook, stirring frequently, until the sausage is no longer pink.

Stir in the crushed and canned tomatoes and bring the mixture to a boil. Immediately reduce the heat to a simmer for 15 minutes.

Toss the pasta and sausage together. Stir in 1 cup of mozzarella and all the Parmesan cheese and transfer the mixture to the prepared baking dish. Sprinkle the remaining 1/2 cup of mozzarella over the top.

Bake for 15 minutes, or until the cheese is melted and the top golden.

    A delicious penne recipe. I used hot Italian sausage in place of the mild but you can easily substitute your favorite kind (turkey sausage would work well too). You could make this ahead of time by under-cooking the pasta and assembling everything minus the cheese and refrigerate (covered). When ready to bake, cook for 15 minutes. Stir, then top with the cheese and bake until it's bubbly and heated through.

    This recipe was great. It's tempting to add ingredients. But adding to this recipe takes away from the subtle mix of flavors as presented. As is, this recipe was enjoyed by all at our table. As a side dish: I break of the ends of asparagus and stand them on end in a large jar and fill the far 1/2 or more with turkey broth. (Best with "College Inn) (No corn suryp)Let stand for 1 or more hours. Them remove and steam cook as directed on your steamer. Uhm! This our favorite way pre-treat asparagus.

    This recipe was alright. If I were to make it again, I would have gone with a more classic italian taste by using more mozzarella and some basil (among other seasonings). I recommend starting the sausage BEFORE the pasta because it took much longer than expected.

    I found some Italian turkey sausage at Grocery Outlet for $3.99, so this was a really cheap and easy recipe. My family loved it. I made enough for 8 people and put it in 2 square pans to freeze one before baking it later. Served it with green beans and garlic bread! (Also added 1 cup Ragu and some salt, oregano and basil)

    I loved this recipe! I made it with a few little twists..instead of the tomatoes I used Classico Organic pasta sauce with basil and herbs, and I also added a few sliced up mushrooms, and used turkey Italian sausage for a healthier version.
