Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Creamy Salmon Pasta

- #65705

under 30 minutes
ingredients
8 ounces spaghetti
1 can (7.5 ounce size) pink salmon
1 tablespoon butter
4 ounces mushrooms, fresh or frozen
1 small onion, finely chopped
1 clove garlic, minced
1/2 cup half and half
2 eggs
1/2 cup grated Romano cheese, divided
1/8 teaspoon black pepper
2 tablespoons dry white wine
1 tablespoon finely chopped parsley
directions
Cook spaghetti. Drain salmon; break into large chunks and set aside.
In large pan melt butter over medium heat. Add the mushrooms, onion and garlic. Cook, stirring until the vegetables are tender, about 3 minutes.
In small saucepan heat half and half to simmering. In small bowl beat eggs and pepper.
Drain spaghetti. Place in heated serving bowl. Immediately add egg mixture, tossing until eggs coat pasta and thicken. Add half and half, 1/4 cup of the cheese, black pepper and wine. Mix well.
Combine the pasta with the salmon and sauteed vegetables, tossing just to mix (and not break up the salmon too much). Garnish with parsley and serve immediately.

It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Beer makes batters better, meat more tender, and sauces more flavorful.
