Crab And Mushroom Omelette

ingredients
2 tablespoons butter
6 shiitake mushrooms thinly sliced
2 tablespoons white onions, chopped
1/2 cup lump crab meat
1 tablespoon sherry
6 eggs
3 tablespoons heavy cream
directions
Melt butter in nonstick skillet. Add mushrooms and onions and saute until light brown. Stir in crab meat. Simmer for 3 minutes. Add sherry and simmer 1 minute more. Set aside half of this mixture.
Beat eggs and cream and pour carefully over the crab meat mixture in pan. Cook until set.
Place remaining mixture over the top of the omelette after it has been folded.
