ingredients
3/4 cup whole wheat berries, uncooked
1/2 package (8 ounce size) cream cheese
1 package (3 ounce size) instant vanilla pudding mix
1 can (8 ounce size) crushed pineapple, undrained
2 tablespoons lemon juice
2 cups fat-free whipped topping
1 1/2 cup seedless red grapes, cut into halves
1 can (11 ounce size) mandarin oranges, drained
2 bananas, sliced
pecan halves for garnish, optional
directions
Rinse wheat berries. Place in medium sized bowl and cover with water. Soak wheat berries overnight in covered bowl at room temperature. Drain.
In a medium sized saucepan, cover soaked wheat berries with about 2 inches of water. Cover and cook on low heat, stirring occasionally, for 2 1/2 to 3 hours or until berries are soft and very tender. Drain berries, rinse and cool.
In large bowl, beat cream cheese until soft. Stir in dry pudding mix, undrained crushed pineapple and lemon juice and mix well. Add cooled wheat berries and stir to blend. Fold in whipped topping. Add grapes and mandarin oranges. Refrigerate until ready to serve.
Just before serving, stir in banana slices, and, if desired, garnish with pecan halves.
