ingredients
3 cups mashed potatoes, seasoned with salt and pepper
1/2 cup chopped cooked bacon or cooked and crumbled sausage
2 tablespoons butter
2 tablespoons vegetable oil
4 eggs
1/2 cup shredded cheddar cheese
directions
Combine the mashed potatoes with the meat. Set aside.
Heat a large skillet over medium heat. Add the butter and oil.
Form the potato mixture into patties about 3-inches in diameter and place in a single layer in the skillet. Use a spoon to create a depression in the center of each potato patty. Carefully break an egg into each indentation.
Sprinkle the eggs with the cheese. Cover the skillet and cook for 7-8 minutes or until the eggs are set and the potatoes are browned on the bottom.
Serve hot.
