canned tuna
Tuna can also be purchased canned and it comes in a wide variety of options including solid, chunk, or flaked. It is packed in either water (lowest in fat) or in oil. For a creamy salad or dip the flaked type will usually work fine but other recipes might require the fish to stay in more recognizable pieces by using the solid (also called "fancy") type.
fresh tuna
Fresh tuna is typically sold as steaks or fillets and can also be purchased frozen. It can be cooked from fresh a variety of ways such as pan-seared, grilled, poached, or baked. Some of the stronger flavored fish can be marinated to reduce the fishy flavor. The highest quality fresh tuna is "sushi grade" and can be eaten raw in Asian recipes like sashimi.
