Avocados are a tropical fruit that have yellow-green flesh and an outer skin that is inedible. The most popular types of avocados are the Haas and Fuerte. When cooking with avocados you must take care to add them during the final assembly of the recipe or include an acidic ingredient like lemon or lime juice to keep the flesh from turning an unappetizing brown color. Note: the discoloration does not affect the flavor.
