Chorizo Bacon Breakfast Burritos-these breakfast burritos are filled with chorizo, bacon, eggs, potatoes, and cheese! A great way to start the day and they freeze beautifully too!

Once everything is put together, the outcome is a cheesy, spicy, creamy, fork and knife sandwich that really wakes up your taste buds! If you love a Mexican-inspired breakfast, this sandwich is for you!

The cinnamon cream cheese and the blueberries combined to make a warm, gushy center to the crunchy flatbread. Best part? It took only moments to make and uses only 3 ingredients!

Ready in mere minutes, this is a tasty and simple breakfast. Just eggs, bacon, and cheese wrapped up in a flour tortilla.

I had some taco fixing leftover in the refrigerator so I decided to make myself a breakfast burrito. I warmed up a leftover tortilla, some black beans and corn, then scrambled some eggs, and put it all in the tortilla along with some avocado, tomato, green onions, cotija cheese, and cilantro.

I gathered a few ingredients that I had leftover from taco night recently and made myself a breakfast taco. Guess what? I LOVED IT! Seriously, I loved it so much I made one for lunch the following day too.

Breakfast tacos are one of those things I make all the time with no real recipe. In Austin, you can find migas all over but I especially like to make them at home because I can make them just a tad bit healthier. Some versions can be overly cheesy and greasy… of course, mine are heavy on the veggie.

Flour tortillas are spread with cream cheese and strawberry jam and filled with sliced fresh kiwi fruit.

Brent was my guinea pig for another fun breakfast idea. He loved this! (and I did steal a couple of the wedges to try)

I love scrambled eggs. I especially love scrambled eggs that have been mixed with chicken, bell peppers, and onions, layered in a tortilla spread with guacamole, rolled up tight, and served with a side of salsa. Breakfast nirvana, you guys.

Workday breakfasts should come together quickly, with a minimum of cooking, and this avocado, egg and spinach quesadilla meets those requirements. Oh, yes, and it should taste great and give you a boost of protein to jump-start your morning. Check and check!

This particular recipe happens to be my favorite way to eat a breakfast taco with eggs. I like the smaller tortillas because they are just the right size and they’re stuffed with all things I love: scrambled eggs, avocado, cilantro, salsa, and seasoned black beans.

These are whipped up with pan-crisped corn tortillas, fresh scallions and avocado, some salsa, and roasted garlic hummus-beaten eggs.

Scrambled eggs flecked with veggies and black beans, stuffed into a crunchy taco shell and topped with creamy avocado. Grab and go deliciousness that's ready in 10 minutes!

Huevos rancheros done quesadilla style with refried beans and salsa ranchera sandwiched between toasted tortillas and plenty of melted cheese with a fried egg!
