I initially decided to try this because my garden was producing mad kale (before the caterpillars destroyed it – boo) and I was looking for new ways to use it. I figured, worst case scenario, I dump it out and only waste a few ingredients. Much to my surprise I not only enjoyed it, but actually prefer it to my old standby green smoothie.

This simple, scrumptious layered smoothie highlights summer produce at the peak of perfection. If you have a high-powered blender, you can leave the apricot skin on; it should puree right along with everything else.

High in calcium, fiber, manganese, magnesium, potassium, riboflavin, Vitamin C and Vitamin E, its impressive nutritional profile and bright-pink hue immediately reminded me of the Energizer Bunny.

If you want this to have more of a frozen texture, you can freeze the pineapple chunks for an hour or so before you make the smoothie.
