2 cups fresh tomatoes, diced into 1/4-inch pieces
1 1/2 cup ripe mango or peach, diced
1/2 cup onion, finely diced
2 cloves garlic, finely minced
2 tablespoons lemon juice
1 tablespoon apple cider vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon parsley or cilantro, finely chopped
OR
1/2 teaspoon dried parsley or cilantro
directions
Mix all ingredients well. This salsa is best after flavors have had a chance to mingle for at least 60 minutes.
