Couscous, Chicken And Artichoke Salad

ingredients
2 jars (6 ounce size) marinated artichoke hearts
4 cups cooked and cooled couscous or orzo or other small pasta
2 cups coarsely chopped cooked chicken
2 green onions, chopped
1/2 cup minced fresh Italian (flat-leaf) parsley
1/4 cup toasted pine nuts, divided
salt, to taste
ground black pepper, to taste
2 tablespoons freshly grated Parmesan cheese
cherry tomatoes or grape tomatoes, for garnish
directions
Drain artichoke hearts, reserving marinade. Coarsely chop artichoke hearts.
In large bowl, stir together couscous, artichoke hearts, artichoke marinade, chicken, green onions, parsley, 3/4 of the pine nuts, salt and plenty of pepper to taste. Stir gently but thoroughly.
Sprinkle with remaining pine nuts and Parmesan cheese. Garnish with whole or halved tomatoes.
