1 (6 ounce size) graham cracker pie crust
1 package (8 ounce size) light cream cheese, softened
1/2 cup sugar
2 eggs, beaten
1 can (21 ounce size) blueberry pie filling
1 tub (8 ounce size) frozen non-dairy whipped topping, thawed

directions

Preheat oven to 325 degrees F. Combine cream cheese, sugar and eggs in a small bowl. Beat until fluffy.

Place crust on baking sheet. Pour mixture into crust. Bake 25 to 30 minutes. Remove from oven. Cool.

Spread blueberry filling on top. Garnish with whipped topping. Chill 3 hours.

    I took Mom of 5's suggestion and pumped up the flavors of this. i needed a super easy dessert but had limited time to cook so that's why I chose it. I added BRANDY to the cream cheese, sugar, and eggs. Then I added a little vanilla and brown sugar to the blueberry pie filling and heated it until the sugar was melted in. Then cooled it and put on top of the cheesecake. FANTASTIC! It's so simple to just add a few touches and really make this yummy. Thank you for the simple recipe that we can build on to suit are own tastes!

    The cheesecake part was a little bland. Not sure if needed more sugar or maybe some vanilla or other flavoring or what. The pie filling was just pie filling. I'd dress this dish up a bit. Add vanilla to the cream cheese base and maybe some kind of alcohol to the blueberry. Not sure what - rum? it just needs something extra. I like how easy it is but it shouldn't taste like it was made from a mix! Has potential!!
