1 carton (15 ounce size) ricotta cheese
1 package (10 ounce size) chopped frozen spinach, thawed and squeezed dry
1 1/2 cup shredded Mozzarella cheese, divided
3/4 cup shredded parmesan cheese, divided
1 egg
2 teaspoons minced fresh parsley
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/8 teaspoon garlic powder
2 jars (28 ounce size) spaghetti sauce with meat
1 1/2 cup water
1 package (8 ounce size) manicotti shells
In a large bowl, combine ricotta, spinach, 1 cup mozzarella, 1/4 cup Parmesan, egg, parsley, onion powder, pepper and garlic powder.
Combine spaghetti sauce and water; spread one cup sauce in an ungreased 13 x 9 x 2 inch baking dish.
Stuff uncooked manicotti with spinach mixture. Arrange over sauce. Pour remaining sauce over manicotti. Sprinkle with remaining mozzarella and Parmesan. Cover and refrigerate over night.
Remove from the refrigerator 30 minutes before baking.
Bake, uncovered, at 350 degrees F for 40 or 50 minutes or until heated through.

I can't believe how simple this recipe is! And it tastes great. I'd never done an overnight pasta dish and was worried it would be mushy, but it wasn't. Does anyone know if you could freeze this and then cook it after it thaws? I would love to find a way to keep one on hand in the freezer.

My husband and I were having a large dinner party so made this recipe for 24 and it was perfect. I made it, a salad, buttered the garlic bread, dessert and set the tables the night before. It was perfect, everyone loved it and I was able to spend my time being a hostess.
