ingredients

4 cups broccoli florets
1/2 medium green bell pepper

Marinade

2/3 cup cider vinegar
2 tablespoons honey
1/3 cup olive oil
1/2 teaspoon curry powder
1/4 cup prepared mustard
salt

directions

Forty-eight hours before serving, whisk together cider vinegar, olive oil, prepared mustard, honey and curry powder. Add salt to taste. Set aside.

Blanch broccoli for 2 to 3 minutes. Drain and transfer to glass container. Pour marinade over broccoli.

Cut pepper into 1/4-inch strips, 1-inch long. Lay on top of broccoli. Cover. Cool. Refrigerate 48 hours before serving.
