ingredients
8 cups sliced pickling cucumbers
3 cups sliced onions
3/4 cup sliced sweet green peppers
2 cloves garlic
3 tablespoons kosher salt
cracked ice
2 1/2 cups sugar
1 1/2 cup cider vinegar
1 tablespoon mustard seed
3/4 teaspoon celery seed
3/4 teaspoon turmeric
directions
In large glass or stainless steel bowl, combine cucumbers, onion, green pepper, garlic, and salt; mix well. Cover with cracked ice. Let stand 3 hours. Remove garlic and drain well.
In saucepan, combine sugar, vinegar, mustard seed, celery seed, and turmeric. Add drained vegetable mixture and bring to a boil.
Pack mixture and liquid into hot sterile pint jars, leaving 1/2 inch head space. Adjust lids. Process in boiling water bath for 7 minutes.

LOVE this recipe. The flavor on these slices are perfect. I have grabbed a fork and eaten them straight out of the jar a few times. Definitely my go to recipe.

My mother used to make this same recipe years ago. Great use of cucumbers from the garden and everyone loves the pickles.
