ingredients

4 pounds wieners, cut into bite-sized pieces
2 large onions, thinly sliced
3/4 cup sugar
2 tablespoons salt
4 teaspoons ground cumin
4 1/2 ounces hot sauce
4 cups white vinegar
1 teaspoon pickling spices
1 1/2 teaspoon whole black peppercorns

directions

Place the wieners and onions in jars.

Combine the sugar, salt, cumin, hot sauce, vinegar, pickling spices, and black peppercorns in a saucepan over medium-high heat. Bring to a boil and let cook, stirring occasionally, for 3 minutes.

Let the liquid cool slightly then pour over the wieners and onions in the jars. Cover the jars tightly and place in the refrigerator for 3-4 days to pickle before serving. Store leftovers in the refrigerator.

recipe tips

Make sure the jars and lids are clean and sterilized before using.

Fill the jars evenly with wieners and onions.

Pour the pickling liquid over the wieners while it's still slightly warm for the best flavor infusion.

Let the jars cool to room temperature before refrigerating to prevent the jars from cracking.

Shake the jars gently once a day during the pickling period to distribute the flavors.

Taste a piece after 3-4 days to check if the desired pickling level is reached. If not, reseal the jar and let pickle for another 1-2 days.

Label the jars with the date of pickling for reference.

Serve the pickled wieners as a snack, in sandwiches, or as a part of a charcuterie board.

Be cautious when handling the hot pickling liquid to avoid burns.

common recipe questions

Can I use a different type of vinegar for this recipe?

Yes, you can use apple cider vinegar for a different flavor.

Is there a sugar-free version of this pickle recipe?

You can omit the sugar or use a sugar substitute, but it will affect the flavor balance if omitted or reduced.

Can I reduce the amount of hot sauce if I don’t want it too spicy?

Yes, you can adjust the amount of hot sauce to taste.

How long do the pickled wieners last in the refrigerator?

Properly refrigerated, they can last for 2-3 weeks.

Can I add other spices to the pickling liquid?

Yes, you can add spices like garlic, mustard seeds, or dill for additional flavors.

Is there a substitute for the cumin?

Can I use this pickling liquid for other foods?

Yes, this liquid can be used to pickle vegetables or other types of meat.

What kind of hot dogs should I use?

How do I know when the pickling liquid is ready?

The liquid is ready when it has boiled for 3 minutes and all the sugar and salt have dissolved.

Can I make this recipe in smaller batches?

Yes, you can adjust the recipe using the "change servings" feature to cut the recipe down (we recommend only cutting it in half - not in odd amounts - for best results).

Cut the wieners into even bite-sized pieces. They should be between 1/2-inch and 3/4-inch in size. Over 1-inch is not considered "bite sized".

I make these often but omit the sugar. I like vinegar!!! I also like to use Thai chiles for heat as well as cayenne pepper. I have a jar of mixed sausages that have been "stewing" for 4 months, sitting on the counter. They should be ready now!!

I have a question. Can this recipe be canned? If so, how long should it be canned and in a presser canner or cold packed? My family used to stuff banana peppers with wieners and they canned them. They were AWESOME! Problem is I can't find a recipe for them and this one is the closest I've seen.
