Roast beef is wrapped up in flour tortillas with cream cheese, veggies, and cheese. Let it chill before slicing and serving so the flavors can meld (and it's easier to cut).
4 flour tortillas
8 ounces cream cheese, onion or chive flavored (or plain), softened
1 cup shredded carrots
1 cup shredded monterey jack cheese
1 pound thinly sliced cooked roast beef
leaf lettuce
Spread one side of the tortillas with the cream cheese. Sprinkle the shredded carrots evenly on top then sprinkle with the cheese.
Layer the beef and lettuce on top of the cheese. Starting at one end of the tortilla, roll it up into a tight roll. Wrap in plastic wrap and refrigerate for at least 30 minutes (1-2 hours is best).
When ready to serve, unwrap from the plastic and cut the roll into one-inch slices.

I was looking for an easy, finger-food type appetizer but I wanted it to be kinda filling. This was perfect. I added a little grated horseradish to the cream cheese filling to give it a little extra boost in flavor. Thank you for posting this!
