1 package (10 ounce size) frozen chopped spinach, defrosted 1/2 cup pine nuts, toasted 4 tablespoons bacon bits (imitation work well) 1 cup cream cheese 3 large wrap sized flour tortillas
directions
Squeeze spinach so that all excess water is removed. Mix spinach, pine nuts, bacon bits and cream cheese together in a medium size mixing bowl.
Spread mixture onto tortillas.
Start at one end of each tortilla and tightly roll to the other end. Spread a small amount of cream cheese onto the inside flap of the tortilla so that it will stick.
Slice into 1 inch slices. Place on a platter and serve immediately or refrigerate until you are ready to do so.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
