Sour Cream Chicken Quiche

ingredients
1 tablespoon olive oil
2 tablespoons chopped onion or green onion
2 tablespoons chopped green bell pepper
1 cup chopped cooked chicken
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon freshly ground black pepper
1/2 cup shredded sharp Cheddar cheese
1/4 cup shredded Swiss cheese
2 eggs, slightly beaten
3/4 cup heavy cream
3/4 cup sour cream
directions
Preheat oven to 400 degrees F.
In medium-size frying pan, heat olive oil over medium-high heat. Add onion and green pepper. Cook 3 minutes, stirring frequently, until onion is tender. Stir in chicken, salt, nutmeg, and pepper.
Spread chicken mixture over bottom of 9 inch pie plate. Top with Cheddar and Swiss Cheeses. In a small bowl, combine eggs, cream, and sour cream; mix until smooth. Pour over chicken mixture. Bake for 20 minutes.
Reduce oven temperature to 350 degrees F and bake an additional 30 to 35 minutes, until a knife inserted near center comes out clean. Let cool for 10 minutes before cutting into wedges.

You may add a pie crust under the chicken.
If you wish, you may lower the fat content by using reduced fat cheese and sour cream. Low fat or fat free milk with 1 tablespoon of flour can replace the cream.
