Classic Spam Quiche

30-60 minutes
ingredients
2 cans (12 ounce size) Spam Classic, diced
10 large eggs
2 cups half and half
3 cups monterey jack cheese, shredded
2 cans green chiles , chopped
1 large yellow onion, chopped
1 red bell pepper, chopped
1 bunch fresh cilantro, chopped
1 teaspoon white pepper
2 single-crust pie crust (refrigerated or frozen)
directions
Place crusts in pie tin, prick bottom of crusts with fork, bake pie crusts in 475 degrees F oven for 10 minutes.
While crusts are baking, dice Spam Classic and brown in non-stick skillet, add onion and red bell peppers, saute until onions are soft.
In large bowl, lightly beat eggs, add half and half, cheese, chilies, cilantro and white pepper. Add Spam mixture, stir just until blended. Pour mixture into pie shells.
Bake at 400 degrees F until quiche starts to puff up and is lightly brown on the edge. Cool a few minutes before serving.
Optional: If you want to make mini-quiches, use refrigerated crescent roll dough and press into muffin tins.
