ingredients
1 unbaked pastry shell, 9-inch
8 ounces softened Brie cheese, rind removed
8 ounces cream cheese, softened
4 tablespoons butter, softened
6 tablespoons heavy cream
4 eggs, beaten
4 dashes Tabasco sauce
1 tablespoon minced chives
directions
Preheat oven to 400 degrees F. Prick pastry shell and bake 12 minutes. Remove and reduce temperature to 375 degrees F.
Blend Brie, cream cheese, butter and cream. Add eggs and blend well. Season with Tabasco; stir in chives.
Pour into pastry shell and set in upper third of oven. Bake 25 to 30 minutes or until quiche has puffed and top is brown.
