Apple Cheddar Quiche

ingredients
2 apples diced
3 tablespoons butter
1 partially baked 10-inch pie shell
1 cup grated sharp Cheddar cheese
3 eggs
2 egg yolks
1/2 cup cottage cheese
1 1/2 cup half and half
1 teaspoon sugar
1/4 teaspoon cinnamon
1 dash salt
directions
In a medium frypan saute apples in butter for 5 minutes. Place in the pie shell; top with cheddar cheese.
In a mixing bowl beat together the eggs, egg yolks, cottage cheese, and half and half. Pour over the apples and cheese. Combine the sugar, cinnamon and salt; sprinkle over the top.
Bake in a 375 degrees F oven for 30-45 minutes, until the custard is firm.

Had this recently at a potluck and found it very runny, almost like it wasn't cooked all the way. Not your typical, firm quiche recipe.
