Honey Mustard Chicken Nuggets

ingredients
1/4 cup low-fat mayonnaise or salad dressing
1/4 cup mustard
2 tablespoons honey
1/4 teaspoon salt
1 pound boneless, skinless chicken breasts, cut into 1 inch pieces
1 1/2 cup corn flake or cracker crumbs
ITALIAN OPTION
1/2 cup mayonnaise or salad dressing
1 clove garlic, minced
1 cup Italian seasoned bread crumbs
MEXICAN OPTION
1/2 cup mayonnaise or salad dressing
1 1/2 teaspoon chili powder
1/4 teaspoon salt
1 1/2 cup crushed no-oil tortilla chips
directions
In medium bowl, combine mayonnaise or salad dressing, mustard, honey and salt. Add chicken and stir to coat, then roll chicken in crumbs.
Bake in a 400 degrees F oven for 15 minutes or until browned.
ITALIAN NUGGETS: Follow recipe above, substituting mayonnaise or salad dressing and garlic for seasonings. Coat chicken with Italian seasoned bread crumbs.
MEXICAN NUGGETS: Follow recipe above, substitute mayonnaise or salad dressing, chili powder and salt for seasonings. Coat chicken with crushed no-oil tortilla chips.
