Tender roast pork is topped with zesty caramelized onions and served on toasted buns. How can you go wrong?

2 pounds boneless pork loin roast
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon olive oil
2 large yellow onions, peeled and sliced thin
1/2 cup chili sauce
1/4 cup apple or currant jelly
1 tablespoon cider vinegar
8 Kaiser rolls, split and toasted
Preheat the oven to 350 degrees F.
Combine the basil, oregano, salt, pepper, and paprika in a small bowl. Mix well then rub on all sides of the pork roast. Place the pork in a shallow roasting pan and place in the oven. Roast at 350 degrees F for 40-50 minutes or until it registers 155 degrees F on a meat thermometer.
Remove the pork from the oven and let rest for 10 minutes.
While the pork is cooking, heat the oil in a skillet over medium heat. Add the onion and cook, stirring frequently, until the onion is lightly browned and soft.
Add the chili sauce, jelly, and vinegar to the skillet. Cook, stirring frequently, for 5 minutes. Set aside and keep warm.
Thinly carve the pork and place the slices on the bottom halves of the rolls. Top each with some of the saucy onion mixture. Place the roll tops over the onions. Serve hot.
