Easy Oysters Rockefeller

Oysters Rockefeller was created by the chef at Antoine's restaurant in New Orleans in 1899. The dish was named after the famous Rockefellers because it was so rich. The original version is a little more complex in the preparation method. This easy version simplifies the process but uses the same original ingredients.

24 oysters in shells
1 tablespoon chopped onion
2 tablespoons snipped fresh parsley
1 tablespoon melted butter
salt, black pepper, and paprika
1 cup chopped cooked spinach
1/4 cup fine dry bread crumbs
1/2 cup cold butter, cut into teaspoon-sized bits

directions

Preheat the oven to 450 degrees F.

Open the oyster shells with a shucking knife. Remove the oysters and pat dry. Wash the shells and place on a rimmed baking sheet covered in rock salt. Place an oyster in each shell.

In a bowl, mix the onion, parsley, and butter. Spread over each oyster. Sprinkle with salt, pepper, and paprika as desired.

Top each oyster with two teaspoons of spinach and then sprinkle evenly with 1/2 teaspoon of the bread crumbs. Dot each with a teaspoon of butter.

Place the baking sheet in the oven and bake at 450 degrees F for 10 minutes or until heated through (the edges of the oysters should start to curl).

Serve hot.

    Great! Tastes just like you'd get at a restaurant. I used frozen spinach for ease and instead of onion used shallots. I could have eaten a dozen of these myself.
