Easy Scalloped Potatoes with Ham

ingredients
1 small red onion, sliced into thin wedges
3 tablespoons butter or margarine
3 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon black pepper
2 cups milk
5 ounces canned ham, drained and flaked
4 ounces shredded Swiss cheese
2 1/3 pounds baking potatoes and/or sweet potatoes, peeled and thinly sliced
2 tablespoons bread crumbs
directions
Preheat oven to 375 degrees F.
In a large saucepan, cook onion in butter until tender. Stir in flour, salt and pepper. Add milk, cook and stir until thick and bubbly. Remove from heat and stir in ham and Swiss cheese.
Place half the sliced potatoes in a greased 2 qt. casserole. Cover with half the sauce. Repeat layers. Sprinkle on bread crumbs.
Bake covered for 40 minutes. Uncover and bake an additional 40 minutes or until potatoes are tender.

The recipe sounds good and I am going to try it. I may try using some packaged chopped ham pieces I have on hand. I have been looking for a recipe for potatoes and ham that is simple and this may be it.
