Christmas Aspic With Avocado Dressing Recipe

Ingredients:
***ASPIC***
1 envelope unflavored gelatin
1 cup no-salt added tomato juice
1/4 cup peeled, seeded and chopped tomato
3 tablespoons seeded and finely chopped cuccumber
3 tablespoons finely chopped celery
vegetable cooking spray
lettuce leaves -- optional
***AVOCADO DRESSING***
1/2 medium avocado -- peeled and chopped
2 tablespoons plain nonfat yogurt
2 tablespoons low-fat sour cream
2 teaspoons lime juice
1/4 teaspoon ground red pepper
1/8 teaspoon garlic powder
Directions:
For Aspic: Sprinkle gelatin over tomato juice and tomato and green chile cocktail in a nonaluminum saucepan; let stand 1 minute. Cook over low heat; stirring until gelatin dissolves. Chill until the consistency of unbeaten egg white.
Add tomato, cucumber, and celery to gelatin mixture, stirring gently to combine. Spoon mixture into a 2-cup mold that has been coated with cooking spray. Cover and chill until firm.
Unmold aspic onto lettuce leaves, if desired. Top each serving with Avocado dressing. (62 calories per serving)
For Avocado Dressing: Combine all ingredients in container of an electric blender or food processor; top with cover, and process until smooth. Cover and chill thoroughly.
