Ready in: < 30 minutes
Difficulty: 3 (1=easiest :: hardest=5)
Serves/Makes: 6
Ingredients:
1 pound rotini --cooked as directed
1 cup broccoli flowerets
1 cup zucchini --sliced
1 cup yellow squash --sliced
10 ounces frozen peas --thawed and drained
1 cup cherry tomatoes --if desired
1/2 cup parmesan cheese --grated
1 cup ranch salad dressing
Directions:
Cook pasta in a large pot with more water than required on the directions About 7-8 minutes before the pasta is ready to be drained, add the broccoli, zucchini and yellow squash. Finish cooking the pasta with the vegetables until everything is tender-crisp. Drain everything well and place it all in a large bowl. Add peas, parmesan cheese and tomatoes (if desired). Toss well with the ranch dressing. Serve warm.
NOTES : You may use any vegetables you desire. Artichoke hearts and black olives are very good in this. If using the tomatoes, add them at the last minutes, as they will get wrinkled and mushy if heated too long.
