Ritz crackers are sandwiched together with peanut butter and dipped into melted butterscotch chips to create gold coins

24 full size ritz crackers
1 cup creamy peanut butter
2 cups butterscotch chips

directions

Evenly spread half of the ritz crackers with peanut butter. Top with another cracker to make a sandwich.

Place the butterscotch chips in a microwave safe bowl. Heat on high for 15 second intervals, stirring between each one until the chips are melted and warm. If the mixture isn't "dippable" you can add a teaspoon of vegetable oil.

When the butterscotch is melted, dip the crackers into it using a candy fork or wide-toothed fork. Cover as much as possible.

Place each dipped cracker onto waxed paper and let the butterscotch harden. Store in an airtight container.

    this recipe turned out great! The kids loved them and they were pretty tasty.

    This recipe was awful. The butterscotch did not melt so I had to spread the hard texture over the crackers. The butterscotch chips burnt in the microwave and did not melt enough on the stove for you to dip the rich crackers in. It sounded great on paper but did not translate in the kitchen. This recipe is just not practical. Did the person who came up with this recipe actually make it?

    • Sounds like you just didn't melt the chips properly. In the microwave, you have to stop the microwave and stir the chips frequently to prevent burning and help them melt evenly. On the stovetop, use a double boiler for melting. If they didn't melt completely on the stovetop perhaps you didn't heat them long enough. The chips will melt. The recipe assumes a knowledge of how to melt chips so that could be why you didn't have luck with it if you aren't familiar with the process.
