Zydeco's Pork Tenderloin Etouffee

30-60 minutes
ingredients
1 pork tenderloin
1 ounce oil
1/3 pound diced onions
1/3 pound diced celery
1/3 pound diced green bell peppers
1 teaspoon garlic puree
2 ounces tomato paste
1 bay leaf
1 teaspoon basil
2 tablespoons honey
1 quart veal stock
1/4 cup light corn syrup
1 pinch thyme
1 pinch chili powder
1 pinch cayenne pepper
1 pinch black pepper
directions
Sweat onions, celery and bell peppers in the oil. Add the tomato paste and spices. Add the remaining ingredients except pork and simmer for 15 minutes.
Brown pork tenderloin in a saute pan. Add sauce ingredients and reduce until pork is cooked.
