ingredients
1 pound scallops
1/2 cup flour
4 tablespoons butter
2 cloves garlic, minced
1 cup diced fresh tomatoes
1/4 cup minced parsley
1 tablespoon lemon juice
salt and pepper
directions
Cut scallops in half. Dry on paper towels, then dust lightly with flour (put flour in a sifter and lightly sift it on scallops).
Heat butter in a skillet, add garlic and mix. Add scallops and saute until they are lightly brown.
Stir in tomatoes, parsley and lemon juice. Season with salt and pepper.

We had this for dinner tonight. I was hoping it would be good. We had it with vegetable fried rice. The only change I would make would be to serve it over linguini next time. Other than that, it is the most delicious meal I can ever remember eating. It is definitly a keeper and we will be having this dish often. Try it. You will not be disapointed!
