This low carb copycat recipe skips the carbs but keeps the flavor. Use anywhere you use regular thousand island salad dressing.

ingredients

1/2 cup mayonnaise
2 tablespoons Walden Farms sugar free ketchup, or other low carb ketchup
1 tablespoon white vinegar
2 teaspoons splenda sugar substitute
2 teaspoons sweet pickle relish
1 teaspoon finely chopped white onion
1/8 teaspoon salt
1 pinch black pepper

directions

Whisk together all the ingredients until wells blended. Place in a covered container and refrigerate for 1 hour before using.

Store leftovers in a covered container in the refrigerator for up to 2 weeks.

    I used Vlasic sugar free bread and butter pickles instead of sweet relish which reduced the sugar substantially. Also used Pyure stevia blend instead of splenda which is also a bit healthier and cut the amount by about a third (to taste) 1/4 tsp onion powder instead of onion. It was really good!

    I am a big fan of chef's salads, and nothing adds more to one than Thousand Island Dressing. Love this recipe because the bottled brands have way too much sugar/carbs.
