Copycat Horn & Hardart's Creamed Spinach

This copycat creamed spinach recipe is the perfect side dish for a Sunday dinner or special occasion. It's creamy and flavorful without being overly rich and heavy.

ingredients

1 pound raw spinach leaves, tough stems removed
2 tablespoons butter
1 1/2 tablespoon flour
3/4 cup milk
1 teaspoon sugar
3/4 teaspoon salt
1/8 teaspoon white pepper

directions

Rinse the spinach but do not dry it. Place in a skillet with a lid over medium heat. Cook, until the spinach has wilted and the water evaporated (2-3 minutes).

Remove the spinach from the skillet and coarsely chop it.

Add the butter to another skillet over medium heat. When melted, slowly stir in the flour and cook, stirring constantly, until it is smooth.

While stirring, slowly add the milk. Cook, stirring constantly, until the sauce has thickened.

Add the spinach to the milk mixture. Stir well then add the sugar, salt, and pepper. Heat through and serve immediately.
