Famous Dave's is a Midwest restaurant chain specializing in barbecue but they also make a killer pecan pie.
1/3 cup melted butter
2/3 cup sugar
1 cup dark corn syrup
3 eggs
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
1/2 cup chopped pecans
1 cup whole pecans
1 (9-inch size) deep dish pie shell, frozen
Preheat the oven to 350 degrees F.
Combine the melted butter, sugar, corn syrup, eggs, vanilla, and salt in a mixing bowl. Beat on low speed with an electric mixer until completely combined.
Stir in the pecans by hand.
Place the frozen pie shell on a rimmed baking sheet. Pour the pecan filling into the shell. Place the baking sheet in the oven and bake at 350 degrees F for 20 minutes. Rotate the pie 90 degrees and bake for 20-25 more minutes.
Remove the pie from the oven and let cool to room temperature before serving. The pie will firm up as it cools.
