Famous Dave's Corn Bread with Honey Jalapeno Glaze

ingredients
1 cup yellow cornmeal
1 cup stone ground cornmeal
1 package (9 ounce size) yellow cake mix
2 teaspoons baking powder
1 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 cup milk
1/2 cup buttermilk
1/4 cup vegetable oil
2 eggs, beaten
2 tablespoons light brown sugar
2 tablespoons honey
1 tablespoon mayonnaise
Jalapeno Honey Glaze
1/2 cup butter
1 large jalapeno pepper, seeded, finely diced
3 tablespoons red bell pepper, finely diced
1/4 cup honey
1/8 teaspoon cayenne pepper
directions
Combine cornmeals, cake mix, baking powder, salt and cayenne in a bowl, set aside. Combine milk, buttermilk, oil, eggs, brown sugar and honey in a bowl and mix well. Add to the cornmeal mixture and mix gently - there should be no lumps, but do not overmix. Fold in the mayonnaise.
Let rest, covered, in the refrigerator for 30 minutes or up to overnight.
Preheat oven to 400 degrees F.
Spoon the cold batter into a greased muffin tin or a cast iron skillet. Bake for 25-30 minutes or until a cake tester comes out clean and the top is golden brown.
In the meantime, make the glaze by heating butter in a saucepan until melted. Stir in jalapeno and bell pepper. Bring to a simmer. Stir in honey and cayenne. Bring to a simmer, stirring occasionally. Remove from heat. Drizzle over Famous Dave's Corn Bread.

You can make the glaze ahead of time and store it, covered, in the refrigerator. Re-heat before serving.

These are not even close to Famous Dave's Muffins. FD's are moist and tender, these are dry and crumbly. The first batch had to thrown away they were so bad. The second< I reduced the cornmeal by 1/4 cup and added 4 tbs more milk. They looked more like FD's but were still dry and crumbly. I took them to the party I had made them for and all agreed they were inferior to FD's.

I hate giving low scores! However, this is nothing like Famous Daves :( It is not a horrible recipe, but since I know others will be looking to this to get that specific flavor, be warned: it's not even close!) It tastes so much like yellow cake (and I measured it to EXACTLY 9 oz as instructed in the recipe.) I used medium ground and regular ground corn meal and it was too crunchy to be like Dave's as well. I hope to try some other recipes on here so I can give good scores elsewhere...but this is not as advertised.

never had famous dave's corn bread, but this is great. best corn bread ever. i used the mini-muffin pans and the heat time needs to be cut back to about 15 min. will make again, and will double the sauce. thanks

This cornbread is fabulous. I was trying to recreate a cornbread that I had eaten at a local restaurant and it comes darned close. I got many compliments on it!

So, I was so excited to make these, since I love the ones at Famous Daves. I found them to have a good flavor, but the stone ground cornmeal was terrible! It was like I had a bunch of gravel in my muffins. I had looked EVERYWHERE for stone ground corn meal, I wish I had never found it.

BEST CORN BREAD RECIPE EVER. I ALWAYS PREPARE DOUBLE THE RECIPE AND SAVE HALF FOR LATTER TIME. PREPARE DRY INGREDIENTS. STORE IN LARGE COVERED JAR. PREPARE HALF OF LIQUIDS FOR HALF USED. THIS WAY YOU ARE A STEP AHEAD FOR COMPANY. WORK GREAT. EVERYONE ALWAYS WANTS THE RECIPE.
