Bistro Luna's Crab Salad with Mango and Mandarin Orange

ingredients
10 ounces Dungeness crab meat, cooked and picked over
2 tablespoons mayonnaise
2/3 cup mango, peeled and finely diced
2/3 cup mandarin oranges
1/3 cup roasted red bell peppers, peeled and diced
1/4 teaspoon cayenne pepper
2 tablespoons fresh chives, chopped
2 cups mesclun greens
salt and freshly ground black pepper
directions
Wrap the crab meat tightly in a clean kitchen towel to absorb excess water.
Place crab meat in a bowl and add the mayonnaise. Mix together thoroughly. Add mango, mandarin oranges, bell pepper, cayenne pepper and 1 tablespoon of the chives.
Add salt and pepper to taste. Mix gently until all of the ingredients are evenly distributed.
Serve crab salad on top of mixed greens and top with remaining chives.
