Ingredients:
10 ounces Dungeness crab meat, cooked and picked over
2 tablespoons mayonnaise
2/3 cup mango, peeled and finely diced
2/3 cup mandarin oranges
1/3 cup roasted red bell peppers, peeled and diced
1/4 teaspoon cayenne pepper
2 tablespoons fresh chives, chopped
2 cups mesclun greens
salt and freshly ground black pepper

Directions:

1. Wrap the crab meat tightly in a clean kitchen towel to absorb excess water.

2. Place crab meat in a bowl and add the mayonnaise. Mix together thoroughly. Add mango, mandarin oranges, bell pepper, cayenne pepper and 1 tablespoon of the chives. Add salt and pepper to taste. Mix gently until all of the ingredients are evenly distributed.

Presentation: Serve crab salad on top of mixed greens and top with remaining chives.
