Mashed cauliflower is a great substitute for mashed potatoes. The ranch salad dressing adds creaminess and flavor. You can replace the dressing with sour cream if desired. Or, dress up the mash with some cheese and crumbled bacon for an even more indulgent treat.

1 head cauliflower, cut into florets 1/4 cup ranch salad dressing 1 green onion, green part only, thinly sliced
directions
Bring water to boil in a large saucepan. Add the cauliflower florets and cook for 15 minutes or until the cauliflower is very soft. It should pierce very easily with a fork when poked.
Drain the cauliflower very well and return to the saucepan. Put the pan over medium heat and toss the cauliflower gently for 3-4 minutes to evaporate any remaining water.
Remove the pan from the heat and add the salad dressing. Mash the cauliflower with a potato masher or large fork and mix well with the dressing until it is light and fluffy. You can also use a mixer to mash it.
Place the mashed cauliflower in a serving bowl and sprinkle with the sliced green onions.

Great recipe! I subbed Lite Blue Cheese dressing for the ranch and it was dee-lish! Only thing, I had to cook a lot of extra liquid out after I mashed the cauliflower but it was very simple. I even got a non-cauliflower eater to try it and she loved it!

This was a good recipe. I subbed the ranch for a lite blue cheese to go with the rest of the spicy dinner I made. The only thing is, I had to cook the extra liquid off the mash for a little bit, but after that- Perfecto! (Even got a non-cauliflower eater to try it!)

This recipe is very tastey. Thought I'd let people know though that if your using regular ranch, the calories are going to be about 140 and the fat about 14 grams...So watch out for that = )

Easy and tasty! Make sure to drain the cauliflower very well or the mash might end up a little watery. I usually put the saucepan back on the heat after I drain it and let any extra water steam off. You can also spice things up with some extra seasonings or one of the flavored ranch dressings.
