Fake your way into their hearts. Cauliflower has a wonderful, versatile quality with healthy undertones. Coupled with cream cheese and chives, this illusionist has replaced the mashed potato.

1 medium head cauliflower, rinsed
1 tablespoon softened cream cheese
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon minced garlic
1/8 teaspoon chicken base paste
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh chives, for garnish
3 tablespoons butter
Bring a large pan of water to a boil over high heat.
Meanwhile, cut the cauliflower into small florets. Place in the boiling water and cook for 6-8 minutes or until the cauliflower is easily pierced with a fork. Drain well then spread the cauliflower out on paper toweling to dry.
Combine the cauliflower, cream cheese, Parmesan, garlic, chicken base, and black pepper in a food processor. Process until smooth, scraping down the sides of the workbowl as needed.
Transfer the cauliflower puree to a serving dish and garnish with chives and top with butter.

This recipe is AMAZING!! So creamy and rich yummy taste!!! I served it just as it says and did NOT add the butter at the end but it didn't need it. I threw everything in my blender including boulin cube and added some of the hot water that the cauliflower cooked in. I must admit though... I'm not a measurer so I just added water with a ladle. I saved this recipe and am thinking it's going to become a staple in my recipes!!! GOOD JOB!!!
