A favorite of low carb and paleo dieters, cooked cauliflower makes a great substitute for mashed potatoes!

2 cups finely chopped cauliflower
1 tablespoon sour cream, or more to taste
1 tablespoon butter, softened
salt and pepper, to taste
Cook the cauliflower in a steamer until extremely soft. Let the cauliflower cool slightly in a sieve over a bowl or sink (to drain) then transfer the cooked cauliflower to a food processor.
Process the cauliflower for 30 seconds. Add the butter and sour cream to the cauliflower and process until smooth. Add salt and pepper to the mock mashed potatoes as needed.
You can use either! Just cook until tender. Frozen cauliflower will cook faster but you'll get better results if you use fresh cauliflower. Frozen cauliflower can be a bit watery.

This is a fantastic mashed potato substitute if you are looking for a low carb version.

You not only want the cauliflower very soft, but also as dry as possible. If it's got too much moisture the end result will be runny. Liked the sour cream in this recipe - gave it a nice texture and flavor.
