Mashed cauliflower is a delicious low carb alternative to mashed potatoes. Even if you aren't watching your carbs this makes a great side dish.

ingredients

1 head cauliflower
4 tablespoons cream cheese
1 tablespoon butter
salt and freshly ground black pepper, to taste

directions

Remove the stem and any leaves from the cauliflower. Cut into small florets (the smaller pieces cook faster).

Place cauliflower in a steamer basket and steam over simmering water until soft, about 10-15 minutes depending on how big the florets are. You want it very tender. Drain well and set aside with the lid of the pan removed for any remaining steam to evaporate.

Cut the cream cheese into small cubes and place in a large bowl. Add the cooked cauliflower to the cream cheese and mash with a potato masher or electric mixer. Hand mashed will be chunkier and the mixer will make it smoother. Add butter, salt, and pepper to taste.

    This was easy to make but lacked a little flavor for my tastes. I ended up sauteing some garlic and onion and stirring that in. Would also be good with some cheddar mixed in to it too.

    This is one of my favorite side dish recipes. After steaming the cauliflower I spread it out on a baking sheet in a 400F oven for a few minutes to get as much of the moisture out as possible. I find that you get a closer consistency to real mashed potatoes that way. Also, don't try this with frozen cauliflower. It doesn't work unfortunately (too watery)

    Super easy and so good. I only used a masher because I didn't have time for the processor and it was great. I did use low-fat cream cheese (it's all I had) and I heard no complaints from my kids or my husband. Thanks!
