Cherokee-Style Hominy

Hominy is a type of corn that has been soaked in an alkaline solution. n this recipe, hominy is fried with bacon and onions to make a delicious side dish.

ingredients

1 can (36.5 ounce size) yellow or white hominy, drained
2 slices bacon, more if desired
1/2 cup chopped onion
salt and pepper, to taste

directions

In an iron skillet, fry the bacon until done but not too crispy. Remove bacon, reserving drippings. Saute the onion in the bacon fat until it's tender, do not drain off excess grease.

Crumble or cut bacon and return to pan; add the drained hominy. Salt if needed; add black pepper if you like. Fry until hot.

Serve as a side dish with breakfast, lunch, or supper.
