Ingredients:
4 tomatoes, top thirds removed
2/3 cup couscous
1 cup vegetable broth
1 teaspoon cumin
1 can (15 oz. size) black beans, drained and rinsed
1 can (11 oz. size) Mexicali corn, drained
3 tablespoons each: chopped cilantro and lime juice
2 tablespoons vegetable oil
1 teaspoon lime zest
1/2 teaspoon salt

Directions:

Remove seeds and flesh from inside each tomato, chop flesh.

Prepare couscous according to package directions, adding vegetable broth and cumin.

In bowl, combine couscous with chopped tomato flesh and remaining ingredients, divide mixture among tomatoes. Replace tomato tops before serving.
