ingredients
18 ounces boneless, skinless chicken breast
2 cups buttermilk
1/2 cup crushed cornflakes
1/2 cup flour
1/4 teaspoon salt
1 teaspoon black pepper
3 tablespoons canola oil
directions
Soak the chicken in the buttermilk for 4-24 hours in the refrigerator. Discard the buttermilk.
Combine the cornflakes, flour, salt and pepper in a medium bowl. Dredge the chicken in the mixture until completely coated. Heat the oil in a large skillet. Fry the chicken for 15-20 minutes turning once. Drain on paper towels before serving.
