6 boneless, skinless chicken breast halves
3 tablespoons butter
1/2 cup seasoned bread crumbs
6 slices thinly sliced deli ham
1 teaspoon Creole seasoning (optional)
6 slices pepper jack cheese
1 can (10.5 ounce size) cream of chicken soup
Place the chicken breasts between pieces of waxed paper on a work surface. Pound flat with a meat mallet or rolling pin.
Dredge the chicken in the bread crumbs, coating both sides.
Melt the butter in a skillet over medium-high heat. Add the chicken and cook, turning to brown on each side.
Place the browned chicken on a work surface. Place one piece of ham on each and fold the chicken in half to cover the ham (you can secure them with a toothpick if needed).
Add the chicken rolls to the crock pot. Sprinkle them with the Creole seasoning. Cover the crock pot and cook on low heat for 4 hours. Place a slice of the cheese on each chicken roll. Evenly pour the soup over the top. Cover the crock pot and cook for 30-60 minutes longer or until the chicken is cooked through and the cheese is melted.
