It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

No cube steak? No problem. This version of chicken fried steak is made with ground beef patties that are coated with a cracker crumb crust before frying.
1 pound ground beef
2 teaspoons chopped fresh parsley
1 tablespoon chili powder
1 teaspoon salt
1 egg
2 cups finely crushed saltine crackers, divided
1/2 cup oil, for frying
Combine the ground beef, parsley, chili powder, salt, egg and half of the cracker crumbs in a bowl. Mix until combined.
Form the meat mixture into patties.
Place the remaining cracker crumbs in a shallow dish. Press both sides of the beef patties into the crumb mixture, coating them thoroughly. Place the coated beef on a wax paper lined plate or tray and place in the refrigerator for 30 minutes.
Heat the oil in a skillet over medium heat. When the oil is hot, add the chicken fried steak and cook for 6-7 minutes per side or until golden brown and cooked through.
Remove from the skillet and serve hot with your favorite gravy.
