Chicken-fried steak is as Southern as it gets, but that doesn't mean you can't put a twist on it. Cumin and oregano in the breading add a Cuban flair, and the squeeze of lemon seals the deal.
2 eggs, well beaten
3 cups dry fine bread crumbs
1 tablespoon dried oregano
1 teaspoon ground cumin
salt and pepper, to taste
2 cups vegetable oil, for frying
4 cube steaks (4 ounce size)
Place the beaten eggs in a shallow dish. Combine the bread crumbs, oregano, cumin, salt, and pepper in another shallow dish.
Heat the oil in a deep skillet over medium-high heat.
Dip each cube steak in the egg mixture, coating completely and letting any excess drip off. Next, dredge each one in the breadcrumb mixture, coating completely.
Place the steaks in the hot oil and cook, turning once, until light golden brown on both sides.
Serve hot with lemon slices and gravy or other sauce, if desired.

Quick, easy and tasty recipe. I would say that the amount of breadcrumbs is way too much. I made only 2 cube steaks, measured 3/4 cup and could have used only 1/2 cup of crumbs. Recipe is a keeper.
